This sweet apple pie inspired high-protein Greek yogurt bowl was pure perfection 👌🏼 I made enough for 3 servings - chop and cook 3 apples, 6 dates, add 1tbsp salted butter, cinnamon, apple pie spice, splash of water (splash of maple syrup if you want a little extra sweetness). Simple but tasty - egg salad on GF toast. Not 💯 traditional though. I like to use up what I have so I threw in some leftover black olives. My go-to breakfast nearly every day is a high protein Greek yogurt bowl. I lift weights daily so getting my protein in is a priority for me but this is great any day of the week.

Gluten free gnocchi-Cooked in a simple quick sauce. Sautee a soffritto (I also added mushrooms), season with salt, pepper, Italian seasoning, garlic, 2 tbsp tomato paste, splash it with sweet (red) vermouth, add in about 2 cups broth (I used beef broth), a can of beans (I used cannellini beans, use what you have, protein and fiber), cook for 10-15 mins, throw in your gnocchi (they will cook in the sauce), cook for another 5-6 minutes, add a few …

Believe it or not, this is 1/2 cabbage and 1/2 spaghetti! Realized I needed to use up and 1/4 of a cabbage and thought I would slice it thinly, caramelize it with a medium onion then add stock, spices, spaghetti some butter, cream cheese and Parmesan to make a 1 pot dinner with slightly less carbs. Super delish dish! Nothing went to waste 🙃
