Gluten free gnocchi-Cooked in a simple quick sauce. Sautee a soffritto (I also added mushrooms), season with salt, pepper, Italian seasoning, garlic, 2 tbsp tomato paste, splash it with sweet (red) vermouth, add in about 2 cups broth (I used beef broth), a can of beans (I used cannellini beans, use what you have, protein and fiber), cook for 10-15 mins, throw in your gnocchi (they will cook in the sauce), cook for another 5-6 minutes, add a few tablespoons of ricotta (measure with your heart), a handful of baby spinach (if you want), turn off the heat and plate it up!
