These are white cannellini beans. So creamy, so easy, inexpensive and full of flavour. Sauté your soffritto (diced carrots, celery and onion), some diced mushroom (optional), salt, pepper and Italian seasoning til tender, then add minced garlic til fragrant, add about 3 cups of broth, I used beef, you can keep it vegan with veggie broth, add 1 can rinsed beans, cook for about 15 minutes. Blend a wee bit with an immersion blender (not too much, just enough to make it creamy. You still want most of the beans whole. This dish should be chunky), add in some carrot slices and cook for another 15 minutes and enjoy.
